Almonds, Seeds and Cranberry Bars
These granola bars are super yummy and make for a healthy snack for you and your little ones. They are also really easy to make. Just gather all the ingredients, mix and bake.
You can make a bigger batch as you can refrigerate/freeze them to increase the shelf life. But I assure you, they will vanish real quick. I actually have to stop myself from picking one each time I open the refrigerator :-)! So give it a try and let me know your comments.

Ingredients
- 1 cup Almonds measure, then chop/sliver
- ¼ cup Almonds crushed to a coarse powder
- ⅔ cup Dried Cranberries (90 grams), chopped
- ⅓ cup Pumpkin + Sunflower Seeds raw
- ⅓ cup Muesli
- ⅓ cup Honey
- 2 tsp Extra Virgin Olive Oil
- 1 tsp Vanilla Extract
- ¼ tsp Orange Extract
- ⅛ tsp Salt
Instructions
- Dry roast the seeds with 1/8 tsp salt till they are slightly crunchy. Chop the dried cranberries.
- Cut 1 cup almonds into slivers. (I use almonds with the skin). Crush 1/4 cup almonds to obtain a very course powder. (Do not over crush)
- Line a 8'' square tin with parchment paper. Let a little extra hang over the sides to help you lift the bar out. Preheat oven to 160 degrees Celsius.
- In a big bowl, mix both types of almonds, chopped cranberries, roasted seeds and muesli.
- Then add honey and olive oil and mix again. Lastly add the vanilla and orange extract and mix well.
- Spoon this mixture into the prepared tray and press firmly to obtain a square shape.
- Bake for 25-30 minutes till the bar sets. Remove from oven and press down again with the back of a lightly oiled spatula.
- Let cool in pan till it reaches room temperature. Thereafter chill in the refrigerator for a minimum of 2 hours.
- Cut into desired shape with a very sharp knife and relish!
Notes
- You can skip the orange extract if you don’t have it. But it gives a nice tangy and fruity flavour to the bars. So would suggest not to leave it out.
- Pressing the bar firmly is important to obtaining proper pieces. If form is not important and you are happy to eat granola with a spoon, then it should be ok if you skip this step.
- You can refrigerate the bars with parchment paper in between to prevent them from sticking together. You can freeze them over longer periods, but believe me, these get over pretty soon.
