Nuts, Seeds and Fruit Rusk
This is a very simple recipe packed with a whole bunch of healthy ingredients. Initially, I was going to try it with all purpose flour but then I thought, why not make it completely healthy and guilt free (except the sugar of course 🙂 ).I have used nuts, fruit and seeds as available at home. You can substitute as per availability / preference/ specific dietary restrictions.
I sliced the loaf as we usually do for rusks. In terms of texture, I would have liked them to be slightly more crunchier. They were a mix of crunchy and chewy which can be attributed, I guess, to oats and fruit (especially prunes which are sticky when chopped). So will try out with different fruit next time and see how the texture varies!

Nuts, Seeds and Fruit Rusk
Ingredients
- ¼ cup Rolled Oats
- ¾ cup Whole Wheat Flour
- ¼ cup Flax, Sunflower and Pumpkin Seeds
- ½ cup Mix of Dried Cranberries and Prunes Chopped
- 1 cup Almonds, Cashews and Pistachios Chopped
- ¼ cup Packed Brown Sugar
- ⅓ tsp Salt
- ¼ tsp Baking Soda
- 1 cup Milk
Instructions
- Measure and chop nuts and dried fruits into small pieces.
- Grease a 9" bread tin with butter / oil. Preheat oven to approx 175 degrees Celsius.
- In a big mixing bowl add all the ingredients and mix well
- Spoon this batter into the bread tin and level gently. Bake for 45 minutes till it turns golden brown and a toothpick inserted in the centre comes out clean.
- Let it cool completely in the pan. Thereafter refrigerate it for an hour.
- Preheat oven to 180 degrees Celsius.
- Remove loaf from pan and slice it into thin slices.
- Place these slices on a baking tray and dry them out in the oven till they turn crispy. Keep flipping the pieces every 10 minutes till you achieve desired results.
- Cool completely on cooling rack and store in an airtight container.
Notes
- You can use nuts , seeds and dried fruits of your choice.
- You can substitute whole wheat flour and oats with 1 cup all purpose flour.
- These rusks are very very mildly sweet. Increase the amount of sugar if you want them to be sweeter. Alternatively, you can enjoy these with a cheese spread of your choice.
