Tender Coconut Ice Cream
This delicious ice cream is made from tender coconut, coconut water, whipping cream and condensed milk. It’s easy to make and doesn’t require an ice cream maker. Tender coconut and coconut water are easily available from any coconut vendor. Be sure to take containers from home so that you don’t have to bring back stuff in plastic bags. Use any good quality heavy whipping cream and condensed milk. You would also need a hand mixer (with the whisk attachment) for your whipping cream.
I read a few recipes claiming that this homemade ice cream tastes exactly like Naturals but my experience was different – they are similar but not the same. I found the homemade version to have a more creamier texture. Do try it out and let me know what you think :-). I guess, it may also have something to do with the brand of whipping cream one uses. During lockdown I didn’t have much choice and had to buy whatever was available at a nearby store.

Tender Coconut Ice Cream
Equipment
- Blender
- Hand Mixer
Ingredients
- 1 cup Whipping Cream
- 1/2 cup Sweetened Condensed Milk
- 1 cup Lightly Packed Flesh of Tender Coconut approx 2 coconuts
- 1/2 cup Tender Coconut Water
- 1/4 cup cup Finely Chopped Tender Coconut
Instructions
- Keep a mixing bowl and the whisk attachments of the hand mixer in the freezer for approximately half an hour. Whipping Cream and Condensed Milk should also be chilled.
- In the jar of a blender, add the flesh of tender coconut and the coconut water and pulse to a smooth paste.
- Add the whipping cream to the chilled mixing bowl and beat using the hand mixer (medium speed) till you obtain soft peaks. This should take you approximately 7-8 mins. Be careful not to over-whip.
- Add the condensed milk and fold in gently (better to mix in one direction). Now add the coconut paste prepared earlier to this bowl and mix gently. Do not beat or stir hard.
- Fold in the chopped coconut pieces.
- Transfer to a freezer container and freeze overnight till the ice cream sets. Please ensure that this container is airtight. It would be better if you could use a cling wrap/parchment paper to seal the cover so that no ice crystals form in the ice cream.
- Your homemade treat is ready to be enjoyed! It's that simple 🙂
Notes
- Chilling the mixing bowl and beater makes whipping easy and quick.
- You can add a little powdered sugar if you want a sweeter ice cream.
- Keep your ice cream container away from the freezer door so that it sets faster.
- You can increase or decrease the quantity of chopped coconut pieces as per your preference.
