Whole Wheat and Semolina Subway Bread

My son loves Subway sandwiches. It’s his once a week dinner menu. So in my quest to replace outside food with healthy homemade stuff, I decided to try out this Subway bread. Thus started my search for recipes. This recipe is adapted from Pradeepa Nair’s blog – culinarylabz. My bread turned out so beautiful I didn’t feel like cutting and eating it. When something you spend so much time and effort making brings you so many compliments, it’s worth it :-). Thank you HBG members for motivating me to do better. Whole Wheat and Semolina Subway Bread

Ingredients
  

  • 487 grams Whole Wheat Flour
  • 162 grams Fine Semolina
  • 1⅗ tsp Salt little more than 1.5 tsp.
  • tsp Sugar
  • tsp Instant Dry Yeast
  • tbsp Milk Powder
  • 1 cup Milk + Water (Lukewarm)
  • tbsp Olive Oil extra virgin

Instructions
 

  • Put all the dry ingredients in a big mixing bowl and stir well. Add lukewarm milk and water slowly to get a sticky dough.
  • Be careful while adding the liquid component. Don't add the entire quantity at one go. It needs to be a slightly sticky dough (not of pourable consistency like cake batter).
  • Transfer this dough to a kneading surface and knead for 10 – 12 minutes using the stretch and pull method. You can add the olive oil little by little to help you with the kneading process. The dough will be sticky. Don't be tempted to add flour. Keep kneading till you get a smooth, soft dough.
  • Form this dough in the shape of a ball, tucking the ends beneath. Place it in a well oiled bowl and move the dough around a bit so that it gets oiled as well. Cover the bowl with a damp cloth or with a cling wrap and keep it in a warm place. Allow it to double in size (usually takes 45 mins to 1 hour depending on the weather).
  • Once the dough has doubled, gently punch it to release all the gases and knead it for a minute or two.
  • Make 5 portions from this dough. Roll out each portion into a rectangle shape (I use a rolling pin) and then fold tightly into a log shape. Gently shape the dough to get a subway bread like shape.
  • Take a sharp knife and make diagonal slashes on the top of the bread. Be careful. The movement should be one swift motion and the cut should be say 1/4 to 1/2 inch deep.
  • Repeat with the other portions of dough. Apply milk wash and let rest on a baking tray lined with parchment paper. Cover with a soft cloth for around half an hour.
  • Towards the end of the proofing time, preheat your oven at 180 degrees Celsius for 10 minutes.
  • Apply milk wash and bake the loaves at 180 degrees for 22-25 minutes till they turn golden brown.
  • Remove from the oven and apply a little butter on top. Allow to cool on a wire rack.
