Pasta in Arrabiata Sauce

You ask anyone what is my son’s favorite food… and without doubt the answer would be Pasta. Everybody knows he will happily eat pasta for days together. And it’s not just any pasta. It has to be the one in tomato sauce. So once in a while I make his favorite Pasta at home. It’s a joy to see him relish it. At our place we like the pasta to have more sauce…like the pasta is literally swimming in sauce. It depends on you how you like it so you can adjust the quantity accordingly. Here’s my version of Pasta in Arrabbiata Sauce.

Pair this rich Arrabbiata Sauce with pasta of your choice. With garlic bread on the side, this makes a pretty looking meal for family as well as for guests.

Ingredients
  

  • 18 Tomatoes medium sized
  • 9-10 Onions
  • 7-8 cloves Garlic minced (finely chopped)
  • ¼ Red Bell Pepper sliced
  • ¼ Yellow Bell Pepper sliced
  • ¼ Green Bell Pepper sliced
  • ½ cup Golden Corn boiled
  • 2 tbsp Olive Oil
  • 1 tbsp Tomato ketchup
  • Salt as per taste
  • Pepper as per taste
  • 3 – 4 tsp Red Chili Powder
  • Oregano and Chili flakes to season

Instructions
 

  • Put whole tomatoes in pot of boiling water. Once the tomatoes look cooked and the skin starts to peel, drain and let cool. Puree the tomatoes and strain.
  • Peel and puree the onions.
  • Heat olive oil in a large saucepan. Sauté garlic for a minute or two and then add the onion puree. Sauté the same till the smell of raw onions goes away.
  • Add the tomato puree. Also add the sliced bell peppers and boiled golden corn. Let the sauce simmer for 10 minutes.
  • Season the sauce with tomato ketchup, salt, pepper, red chili powder, oregano and chili flakes.
  • Add in cooked pasta of your choice. Serve hot!

Notes

  1. I usually use this quantity for 250 grams of Pasta. But you can adjust the quantity as per your preference. We don’t prefer dry looking pasta.
  2. Add in any veggies of your choice (Zucchini, Broccoli etc.)
  3. Freeze excess sauce to use later.
