Chia Seed Mango Delight Pudding
Chia Seed Pudding is probably the quickest and healthiest breakfast you can make. You just add the seeds to milk and sweetener of your choice and refrigerate. It’s as easy as that 🙂
Health benefits of chia seeds
Chia seeds are tiny black seeds from the plant Salvia hispanica. These tiny seeds are packed with fiber, protein, omega-3 fatty acids and various micronutrients. Chia seeds have all nine essential amino acids making them a good plant based source of protein. They also contain key minerals like calcium and magnesium and antioxidants which prevent cell damage. A lot of articles I read suggested that chia seeds promote heart health and help reduce risk of cancer.
I intend to keep experimenting with this nutritional powerhouse, now that I have read up about so many of its benefits. I have already used them in cookies and I love the texture they lend. Next was this chia seed pudding which we enjoyed with a variety of toppings. My husband went in for almonds, cashews, dried figs and chikoo ( sapodilla). I on the other hand went for mango, muesli and almonds. Chia seeds don’t have a distinct flavour of their own, so you can add any toppings or spices of your choice. They swell up substantially when added to liquid and have a sticky texture. I kind of like it!!
Chia Seed Mango Delight Pudding
Ingredients
- 6 tbsp Chia Seeds
- 400 ml Almond Milk
- 1½ tbsp Honey or Maple Syrup
- Toppings of your choice
Instructions
- In a bowl or a jar, add milk and honey to the chia seeds and stir well. Let sit for 5 minutes
- After 5 minutes stir again and ensure that there are no lumps remaining. I used two spoons to just kind of break the lumps.
- Cover the bowl/ jar and refrigerate for a couple of hours or overnight.
- Garnish with mangoes, almonds and muesli or any other toppings of your choice.
Notes
- You can use sweetner of your choice.
- Add vanilla extract if you wish. Once the base pudding is ready you can garnish with any fruits, nuts or toppings.
